Homeade chicken soup from scratch just like my Mama made it! “From scratch” sounds scary, but this recipe is SUPER easy, calls for only 5 ingredients, and can be on the family dinner table in under an hour! Best of all, it tastes just like childhood
Chicken soup is perfect for this (almost) February cold weather, and heals any and all ailments. Yes, I live in San Diego. Yes, it still gets cold here. Maybe I’m just a wuss, but man do I hate the cold!
Everyone seems to be sick right now. More than half the people at my “real job” have been out sick this week, even my Peanut Princess niece is sick on the other side of the country!
I’m telling ya I beat the odds by making this super yummy soup on Monday and eating it allllllllllllllll week long. I even recruited my 8 year old Twin boys to help because it is that simple to make. Simple = Deliciousness.

Mama’s 2 Step Homeade Chicken Soup for the Soul
Equipment
- Soup Pot
Ingredients
- 4 lbs Split Chicken Breast Halves Half breasts with ribs bone
- 1 lb Baby carrots Chopped
- 1/2 whole Yellow Onion Chopped
- 4 Stalks Celery Chopped
- 1 Cup White Rice Cooked
- Water Fill Pot
Spices
- To Taste Black Pepper
- Generous Dried Basil
- 8 Cubes Chicken Bouillon Cubes To Taste
- Parmesan Cheese Optional
Instructions
- Add Chicken, Celery, Onion, Bouillon Cubes, Pepper, and Basil to large soup pot. Fill with water and bring to a boil. Reduce heat to medium and simmer until Chicken is fully cooked. About 30 minutes.
- Remove Chicken and separate off the bone. Return shredded chicken to pot and add carrots. Simmer an additional 10-15 minutes.
- Serve over cooked white rice and Enjoy!
